30-Minute Braised Chicken

Working time: 10 minutes    Total preparation time: 40 minutes

  • 1 large onion, sliced
  • 1 T olive oil
  • 1 garlic clove, crushed
  • 2 tart apples, cored and cut into chunks
  • 4 oz pitted prunes
  • 1/4 cup plus 1 T white wine

Place a heavy non-stick skillet over high heat and saute the onion in the oil for 2 minutes, then add onion, stirring constantly.

Add the chicken and cook for a few minutes, turning each piece until browned. Add the apples and prunes, stir well, pour in wine and bring to a boil. Simmer, covered, for 30 minutes until chicken is tender.
