Working time: 10 minutes Total preparation time: 40 minutes
- 8 boneless skinless chicken thighs
- 1 large onion, sliced
- 1 T olive oil
- 1 garlic clove, crushed
- 2 tart apples, cored and cut into chunks
- 4 oz pitted prunes
- 1/4 cup plus 1 T white wine
Place a heavy non-stick skillet over high heat and saute the onion in the oil for 2 minutes, then add onion, stirring constantly.
Add the chicken and cook for a few minutes, turning each piece until browned. Add the apples and prunes, stir well, pour in wine and bring to a boil. Simmer, covered, for 30 minutes until chicken is tender.
Serves 4
