Buttermilk Brined Pork Chops

Working time: 10 minutes

Total preparation time: Overnight, plus 10 minutes

4 Pork Chops, center cut, 6 ounces each, about 1/2 inch thick

  • 2 Cups buttermilk

    Pork Loin Chop, Bone-In from Ayrshire Farm, order online

  • 2 T. kosher salt
  • 2 T. sugar
  • 1 T. grated fresh lemon rind
  • 1 tsp. chopped fresh rosemary
  • 1 tsp. chopped fresh sage
  • 2 tsp. ground black pepper
  • cooking spray

Combine buttermilk, salt, sugar, lemon rind, rosemary, and sage in a large zip-top plastic bag. Shake well to dissolve salt and sugar and mix ingredients.

Add pork chops. Seal and refrigerate overnight, turning bag occasionally.

Remove pork from bag; discard brine. Pat pork dry with a paper towel. Sprinkle pork with pepper.

Heat a large, non-stick pan over medium-high heat. Coat the pan with cooking spray. Add pork chops; cook 3 1/2 minutes on each side, or until desired degree of doneness.
